The packaging states ‘unprocessed’ and doesn’t mention anything about heat treatment.

Q: what is the "Best By" date on the package?

Food (plants) obtain vitamins, minerals, nutrients etc. from the soil and sun. Once the food(plant) is picked or harvested, it starts losing those minerals, vitamins and nutrients that we get from eating the plants as food. We need to eat those plants to obtain those vitamins and nutrients for our bodies to build and repair themselves (grow). That date gives us the best time to eat the food to get all those nutrients etc. that are bodies need from the plants. After that time the plant (food) starts to deteriorate and loose those vitamins and nutrients and eventually turns “bad” or unable to give or pass those nutrients and vitamins on to us for growth. The taste and texture is one way to tell that loss also. As the food looses these valuable nutrients etc. bad things(bacteria/germs) can feed and grow on the breakdown of those nutrients and if we eat it after that time it can make us sick….so that date also gives us an idea of when that “breakdown “ starts to occur. That is why farmers have to harvest lot pick crops at set times and those crops must be cleaned “processed “and delivered to us quickly to stay within that “goo” date or time..
