The BEST flour for NY style pizza, hard rolls, bagels, etc. Wherever a high quality high gluten flour is needed. This flour beats them all. The rise is glorious. The oven spring is amazing. The flavor is superb.The 25# sack is the perfect size for avid home bakers. I process it into 5 pound, vaccum sealed bags that get a week in the freezer. Then they go into food safe 5 gallon buckets with Gamma seal lids. Never had any problems with bugs, even 12 months later (when I bought a 50 lb bag)The bag was fully intact, packed into a box, and well before the expiration date.

Game changer for our pizza!
Game changer for our pizza! This gave our pizza a much lighter feel and wasn't as dense as the previous one. Also buying in bulk is a lot cheaper. This is our new go to pizza flour

Trumps everything
There's not a flour that will do exactly what this does. Perfect for NY pizzaria doughs. Works great for breads and bagels. Don't overwork it, the gluten builds rapidly. Mix it 50/50 with all purpose if you want a protein % similar to bread flour.

The flour makes a difference…
I’ve been making Neapolitan style pizza on my wood burning oven for 10 years with great success , but never had great success making NY style pizza using my home oven. This bromated flour did the job. I did a 2-3 day cold rise and a pizza steel with a stone inches above and wow! Maybe it’s all in my head , but it was the best NY style pizza I’ve ever made, thin, airy and crunchy.

Tried for years to make an authentic pizza crust and then I bought this. You’ll never use another flour for pizza-hands down the best!

Great flour to bake with
I bake everything with this flour. The only thing is if you buy this bag, you need to have a storage container to keep it in. If stored properly it will last for several months.
