Pitturi Sergio’s company has been producing quality olives in the Marche region for over 25 years. They season the olives by hand, and work in small batches – 50 kilos at the time. After the olives are picked, they are packed in salt for three days, then moved to containers with continually flowing water. There they are rinsed until their salt content is down to 5%. They are seasoned by hand, marinated, and vacuum packed to ensure freshness.
