I measured these with my digital caliper. The smallest one is .32". The medium sized board is .36" and the largest cutting board is .40" thick.

Q: I hate that these boards come in white. Boards get so stained from the vegetables. Is it the same for these?

It so far stains when I initially cut the vegetables but nothing has been permanent; a quick rinse or running it through the wash cleans it.

Q: Can you cut on both sides of the board??

Both sides can be used for cutting. Both sides have the non-grip feature. Only 1 side has the groove to catch juices.
