Old Hickory Skinner wins price, quality, and above all, its carbon steel will hold an edge.
I bought this blade for fish cleaning and dressing. Ask anyone who has used it. There are different requirements for cleaning because of the variance in size, bone size, and separating the filets for thickness. This is the go to blade when others fail! It is well built with Oak hardwood handle and solid rivets; will last a lifetime with a little care.

Great knives!
These are great “old school” knives! They aren’t stainless so they sharpen very easily! Worth every penny.

Best skinning Knife
The factory edge was a bit wide and had a chip at the edge. However I didn't mind I just reprofiled it and it was good as new. One of the best skinning knives I own now!

I upgraded after purchasing
Wanted old hickory for a knife set . Finally pulled the trigg and got it. Wow what a sad state of things since I was younger. Knife handles are poorly fitted on every single knife. Not finished sanded . Splinters and overlaps on each handle in the set and this one was no exception. Steel blades were all off center on spines each apper to have a slight 2-4 degree angle where stamped (cut out of sheets, not logos) from one side. Poorly crafted. I bought a Dexter Russell classic and got the knife I was looking for in the old hickory .

Good and sharp and easy to keep that way. Price is great. Be advised, these Old Hickory knives are not stainless, so if you don't dry them, they'll rust!
