I got the XLSEAFOOD Sun Dried Hokkaido Sun Dried Conpoy Grade AAAA Size 180 Conpey 美国旭龙行 特级日本宗谷足干干贝 江瑶柱 180头 (8OZ) size. These come in a resealable bag that can be kept room temperature until opened. They had a good, even color.I hadn't used dried scallops before, but I do like scallops. These do require a bit of extra prep since they need to be soaked first, but that is common with dried foods.While this bag is pricey, I think it is fair compared to fresh scallops. This bag lasts a long time since only a few scallops are needed per dish. The flavor is quite strong. I love the flavor these scallops add to broth. They're okay in rice, but I like using them best in soups.

There are a lot in this bag.
First I soaked these according to what the Amazon description says. After a few hours of soaking they did fluff up a bit and turned a lighter color.I cooked these scallops and shrimp together and then fried them with butter, then they were ready to put into the sauce. I combined them with Alfredo sauce and noodles.So... here is what I thought of the taste. The scallops were stringy. They don’t taste like the scallops I’m used to. I think I would rather have fresh over the dried.A plus-There is a lot in the bag and you don’t have to use the whole bag with one dish. The bag has a stay fresh seal on the bag so you can keep them for a another meal.

Delicious, great seafood flavor!
These dried scallops bring me back to my childhood where my parents would add them in porridge and soups. They were only eaten occasionally because it was expensive and still is. These dried scallops are still delicious. They taste just like how I remember it, a great seafood taste and adds great flavor and umami to any soup, congee, or in sticky rice. Just a small amount adds great flavor and depth to your dish and the scallop itself is delicious, stringy and chewy and contains bursts of flavor. It tastes very fresh and is well dried and cleaned. Definitely, enhances the flavor of any dish!

Incredibly fresh scallops | make sure to rehydrate before use | unclear where product is made
Don't be alarmed by the price tag. These are conpoy, which are dried scallops, and you're not going to use very many of them. They are a delicacy that is best used as a garnish for a dish. I made scallop and pork congee with these. You need to soak the scallops for 20-30m before you use them to rehydrate them. Some people say that if you are making a broth or congee, you don't have to rehydrate them, you can just throw them in. But here's the problem: because these are so flavorful and so expensive, you're going to want to pull the fibers apart after they rehydrate to distribute them better in the soup. When they dry, they are as hard as rocks, so you have to rehydrate them to pull them into smaller pieces (which you should do before you make your congee). These scallops seem to be especially fresh. They don't have any of the white spots that older scallops develop as a sign of age. To keep them extra fresh for 4-6 months, store them in the fridge.The only thing that confused me about these is that they come with printing on the package that says made in USA, but the company appears to be Chinese and the scallops are allegedly from Hokkaido. So I would like to know (1) the origin of the product, (2) where the product is processed and how, and (3) where the company is headquartered and the location of the manufacturing site. Normally I would deduct a star for this but they seem to be incredibly good quality so this time I'm giving it a pass.

Small but good quality
I think this is overpriced. The conpoy are very small in size and light in color. I have been paying less for bigger Hokkaido conpoy from asian stores. I guess you have to pay more for the convenience that Amazon provides. I soaked them in water in the fridge for a day. Then make rice porridge with them. The flavor was not bad for its size and color.Overall, it is of good quality based on the size but overpriced.

The XLSEAFOOD Sun Dried Hokkaido Conpoy is a unique and delicious ingredient to add to your Asian-style soups, congees, fried rice, sauce, and other recipes. For those who have never tried dried conpoy before, these are little umami bombs that require some prep before using. This is the stuff that gives XO Sauce its salty burst of seafood flavor. The flavor of the conpoy is very pungent, with strong notes of seafood and reminiscent of certain salt-cured meats. A small amount goes a long way in terms of flavor, and about 30 grams of scallop was more than enough to add tons of flavor to my 10 cup pot of congee. The XLSEAFOOD Size 180 conpoy is slightly smaller than a quarter but has a rich strong flavor that worked perfectly in my congee. The scallops were dried well with no sand or debris in the bag, and the flavor was delicious. I also got to try the larger Size 100 conpoy and its flavor was very similar, but you get slightly larger threads of scallop in your recipes which results in stronger bites of flavor. The scallops were very fresh and tasted great. It's not written on the bag, but if you want to keep these fresh, it is recommended to refrigerate or store these in the freezer to help maintain freshness and flavor. Overall, if you're looking for a good quality conpoy, this is a great option to consider.

Not great, not terrible
I wanted to use these to add to some soups to get some extra nutrition and body.I found that they were difficult to rehydrate. After stewing for about 15 minutes they were still tough.I would like to try stewing them longer to see if they soften up, I was definitely expecting something more like a regular scallop after rehydration.

Tasty and easy to use
I hadn't tried dried scallops before although I'd seen them in Asian stores. I like that these are from Hokkaido, Japan. The Japanese food and drug regulations seem very strict, so I trust that these are safe.The dried scallops were easy to use. I soaked them for 5 hours before cooking and they were flavorful and soft. A real treat!
