Q: Will these fit in a 1981 Gibson V?

If only mounted on the pick guard, yes. If they have to mount on the wood from the back side, the shafts are too short.

Q: Will these work w a Gibson sg?

These are CTS 500k variable resistance knobs they will be great in your SG just make sure of the diameter of the shafts before you order them. I used them in my ES335 with a 0.022 microfarad capacitor and I get great sound.

Q: would this work with coil tap ? i have the 2015 studio which im changing into the schematic diagram in order to install my lace drop and gain pups.

These are standard 500K pots. You'll need to either use a separate switch or a Push/Pull pot for coil tap wiring. Standard size pots- short or low profile shafts. They're split so if your knob is two big you can find a bit of room to make the snug.
