Nice to hold and work with on a chicken
The one star off is because I have my doubts about the spring setup. They do also since they included a spare spring in the case with the shears. Other than that, it does cut up a chicken nicely. They fact that it is Japanese is a plus from the blades point of view. This is a step above American and two steps above Chinese.

Great kitchen shears, beat pair I've owned out of 6 which might not be saying much, but I've had the for 4 years and they haven't dulled a bit.

Sharp and Comfy to Hold - Does the trick!
I wanted this for a recipe requiring deboning chicken thighs. The normal kitchen shears that look like scissors were not cutting it (literally). This one is sharp and easy to use. I did the task in a quarter of the time it took with the kitchen shears I was using before. Highly recommend. Also like that they are made NOT in China.

Perfect at 1st Dull and Dangerous to use after 2 months. I need to throw them in the trash. .
I purchased these kitchen shears because I do a good deal of cooking and because the Japanese are known for very high quality stainless steel and cutlery. I cannot recommend to anyone to buy these shears based on my own experience as after a short use period they became dull and practically speaking of no use. Maybe the one I got from Amazon had no quality assurance oversight I have no idea . As dull shears are dangerous to use mine are going in the trash. Must have Kitchen scissors
These are the kitchen scissors I’ve been waiting for. They’re amazing. They easily cut through crab shells and make spatchcocking a breeze. Easy to hold and cut through bone. Quick cleanup!

Not for elderly Mothers, and and overkill for fresh water pan fish/trout.
If you have a traditional stay at home mother/great grandmother who loves fish because it's "good for her", this scissor isn't for you. It is too big and not for little fresh water fish. It is extremely huge for her and the strength you need to exert it unfortunately isn't for her. But she claims Dad uses it on poultry, and it works fine. For now, she is happy with her gardening scissor someone threw out.
