The best filet knife for the price
I trim beef tenderloins with this every day. It stays sharp for 3-4 loins, it’s very flexible, and it’s the perfect tool for cleanly removing silver skin. It’s comfortable to hold and there were no imperfections in the finish when I got it. Considering the quality and how much use I’ve gotten out of it so far I would have been happy to pay 2-3 times as much for it.

I received 3 of these knives in a kit for culinary school and I decided to add to the set glad I did I'd compare these knives to brands that are 3 or 4 times the price of mercer cutlery

Good knife
Good knife, easy to sharpen.Handle could be better. A bit uncomfortable to hold tightly that makes it slightly difficult to maneuver.Blade is not as rigid as I'd like, but overall a quality knife.

Excellent value knives
I bought a single Mercer knife based upon researching Amazon reviews and really like the brand. In fact, so much so that I've assembled a full set of knives picking and choosing which individual knife I want for the set. This sized blade is just the right size for a variety of kitchen functions.

doesn't really hold an edge.
I have another chefs knife of this brand and decided to buy another of their knives. The blade lost its edge way faster than I expected. Also I've been notice the blade has more bend to it than I'd like. I'm planning on resharpening the knife this evening and see how long it will keep an edge, but it's not my goto knife. I bought specifically for lite lunch prep, sandwiches and the like. I'm just hoping it's the factory edge not being as sharp as I'd like.
