fantastic as I was told
I came across this knife via a review by American Test Kitchen on U-Tube. It is a fantastic knife which has made my life keenly more interesting, cutting home made brad that is. It works very well on soft tomatoes as well. I feel it will work for years to come/

Really Good bang for the buck
The 10 inch chef knife is pretty big. However. if one holds it correctly there are still many uses for a knife this large. This Mercer product is a no-frills thing. The handle feels good in your hand and the balance is better than one would naturally expect. It was very sharp out of the package and I have just touched it up with a ceramic rod when it started to dull. As is the case with many knives that should be held along the spine, it could use a bit of polishing/softening along the first 4 inches of the spine to increase comfort. Overall this knife is a good, practical, and utilitarian buy. It can sure help when cutting up some South Carolina Bar-B-Q.

This is my sicth Mercer Knife!
I now have six Mercer knives and they are spectacularly sharp, feel nice in hand and such a great value. I love the Millenia knives and buy them for specialty knives, where I cannot justify big bucks (think bread knife, boning knife, filleting knife, produce knife) I can only imagine how good their premium knives are, if I needed an 8” chef knife I would totally get their premium because of how great these ones have been. I cannot believe how affordable they are and how good!

Really nice knife
<y review is for the Mercer Culinary Millennia 6-Inch Flexible Boning Knife:nicely made, good quality blade - really sharp so be careful. I like the handle as well as it's a sort of rubbery texture not likely to slip out of your hand when the blade gets wet/oily.I used this to carve a leg of lamb - I had to see for myself how good this was - excellent! I also had this knife in mind for the brisket I have for an upcoming dinner.Overall, I'm impressed with the quality and the price point!
