Grown in the remote hillside jungles in the Kingdom of Cambodia, along the Gulf of Thailand, these Rare Peppercorns are tended by hand on mountain slopes, and manually picked from March to July. Each batch is traceable to the grower. The European Union has designated Kampot Pepper as a Geographic Indication, with protected status to ensure authenticity, purity, traceability and sustainable organic farming methods. Our Kampot Pepper is Certified Organic. Red is extremely rare pepper, with yearly production of less than 4 Metric tons. The Red flavor profile is delicate and gentle, but with an explosive finish. The Red Peppercorn variety of Kampot Pepper is very hard to get, requiring intensive manual labor to harvest. Red peppercorns (not to be confused with Sczechwan pepper, or pink pepper), has to picked within one day of turning red on the vine, otherwise the corn will turn black. Each drup matures at a different rate, so red peppercorn pickers must process each plant daily, plucking the perfectly red peppercorns. Even though the growers get up to 50% more for Red, they are reluctant to offer it because of the intensive labor. Supplies this year extremely limited.
