Between Loire and Vilaine in the south of Brittany, the salt basin of the Gu�rande covers almost 2000 hectares of salt marsh. Prior to the 9th century, the creation of the Gu�rande salt marshes spanned several centuries. The fleur du sel appears during the first stages of the formation of the salt: the fine and light salt crystals float in patches on the surface of the water. It is a rare product and its production is low. The flower is `picked' with a specialist instrument: the Lousse. Fleur du sel is used liked fine salt. Its flavour is like no other, its scent is of violet; its fine, slightly moist crystals mean it is a perfect compliment to fresh vegetables, chips or soft-boiled eggs.
