Can I attach my knife honing rod to this stand?

If the honing rod has iron in it. It should work fine, We have knives and carving forks hanging from ours.

The knife block has a very strong magnet on both sides!

Will this hold the knife while still in the sheath?

Maybe, if the sheathe is thin enough. I tried a doubled up thick towel behind a chef's knife and it slid downwards - just the towel not doubled it held ok.

I had to get a replacement because the screw heads were stripped. Any tips on how to screw all the way in?

I have the same complaint. Hard to screw the base on. It works and looks ok unless you’re looking in detail. It’s very functional and we love it
