Q: Will this jig do everything that the more expensive Kreg pocket hole jigs can do? I understand that I'll be stuck with longer set-up times, etc.

Simple answer - yes, they are both used to drill pocket holes. . The larger jig provides more accuracy in alignment, better repeatability, speed and a lot less time and frustration. I have both, never use the mini unless the cabinet is already assembled and don't have the space to use the larger jig.

Q: How do you adjust for different thickness stock using this jig?

Copied from the Kreg Jig Mini manual. For standard 3/4" (19mm) thick material. Simply align the edge of the jig flush with the end of the workpiece and clamp to position it correctly. To set the jig for working with 1/2" (13mm) material position the edge of the jig 1/4" (6mm) beyond the edge of the workpiece and clamp. To center a screw in 1-1/2" (38mm) material, set the end of the jig back from the edge of the workpiece 1-1/4" (32mm).

Q: Which Kreg screws do I use for this jig with 1/2 inch and 3/4 inch stock?

For 3/4" stock it would be a 1 1/4" screw. I've never used it for 1/2" stock but I'd guess you'd use a 1" screw.

Q: Can I make pocket holes in 2x4's with this jig?

The short answer is yes. You can make pocket holes in any wood with this. I can't say that I have personally used it for that or for wood joints with 2x4s. I've only used it for 1 x 2's
