Good quality kitchen fillet knife
Excellent quality build; nice sharp flexible steel. I have not sharpen the blade yet but anticipate no problems. It’s the correct size for all my freshwater fish and some smaller salt water. We hardly recommend this as a kitchen only fillet knife. In other words, do not use this outside. I don’t believe the handle will hold up to the elements, but that’s only my opinion, of course.

Comes very sharp and holds an edge well, just like the henkles knives I have been buying for years
This is a good knife. I use it to bone and butcher leg of lamb so I can put it on the grill. So far it is as good as the chefs knife I bought 30 years ago. Henkles knives are rather hard so they take a bit of time to sharpen, but this lets them hold an edge for a long time. This knife was made in Spain. Henkles used to only make knives in Germany. I was leary when I bought this. I bout a henkles knife at Target because it was very cheep. I got home and it was made in China. That knife did not hold an edge well and I have to sharpen it frequently. I guess you get what you pay for. I tried this spanish knife and it seems really good. I would buy it again.

This knife is very sharp!
The handle is wonderful. It fits nicely in my hand and feels very sturdy and stable. I bought the 5.5 inch boning knife as an addition to my set. It is EXTREMELY SHARP! It is flexible enough to get as close to the bone as you need yet strong enough to peel potatoes. The sharpness of the blade made dinner prep go so much faster. I didn't realize how dull my other knives were until I used this knife. This knife was worth every penny I spent on it. It can be used to debone pork or slice tomatoes wafer thin. It is so nice to have a quality knife that is so versatile. I just can't say enough good things about this knife.

This is great knife as expected from the famous brand, especially for the price. But If you need flexible blade this product is not for you.

For a long time (20+) years fan of the Henkel line(s), this knife was less than stellar. The knife edge, as received from the factory (Spain) looked and felt like it was sharpened with a workshop bench grinder. The handle, while similar in design to the earlier “Classic”-look, has an off feel to it. Likely the edges are too sharp. Not their best work from a renowned German company who appears to be farming out their production. This will likely be my last knife from this company!
