Excellent workmanship. They take a seasoning well. Good sizes. Not too heavy. They have quickly become a just about daily use set of pans. Very happy with them.

Mauviel carbon steel pans will become almost non-stick with proper seasoning (follow videos on Mauviel site or others) before first time use. The protective beeswax coating is so good that you need a lot of very hot water and paper towels to remove all of it. That's probably the most time consuming part, and after seasoning with oil on the stove top (gas is best) or in the oven (if you don't have a gas cooktop). In any case, there are quite a few helpful videos you can find doing a google search, and once you start using these carbon steel pans, you'll appreciate that you can use metal utensils to cook. The non-stick property becomes better with usage, so long as you don't throw it in the dishwasher or use detergent to wash...just like cast iron....

Love these. Heat quickly, perfectly smooth. I seasoned with grapeseed oil. Eggs slide out. On the middle size, I have to scour out some build up and possible reseason, but it’s working great.
