My husband was the manager and lead production in a custom cannery in Winchester Bay Oregon years ago; it was a single line of production that Processed the fish brought in off each boat separately with special codes on all the cans for each fisherman so each client could have his own catch personally canned and or smoked and processed and sent to his home. To set up an entirely new line with different requirements requires complete break down and cleaning process of the entire equipment in 3 rooms: filleting breakdown, curing & smoking, and canning and processing and packaging and completely new labeling that must be printed days ahead of time and sent from the printers back to the fish processing plant. Any change out of the predictable normal options can back up orders for weeks. ----And not to forget the state regulations for following the proper codes to be stamped on the outside of the tins for food and drug regulations. Everything adds up to hours and hours of personal attention to detail. $20 is a steal!!
