A book for inspiration
Bought for husband to help inspire him when foraging. Lots of ideas on what you can use as well as the berries we all know and love. Author is in North America but the ideas and creativity will work just as well in Europe where we are.

I am delighted with the book
Bought this book as I am interested in learning more about wild yeasts. I am delighted with the book. It's really easy to read and the author's explanations around the wild ingredients and methods he uses as well as the historical context that he shares make it really informative. If you have any interest in wild food or food history you will love this book as well as those interested in brewing.

Another wonderfull book of Pascal Baudar. Can't wait to go out, pick what I can find in my own 'terroir' and start brewing. Pascal has a way of telling things that you tast, smell and feel what he is writing. He invites you to use the recepies as a basic for your own brewings.

This is a must have reference book for any new or experienced brewer of wines, beers and sodas. The book is well written and the author's experience and enthusiasm make it a must read! The recipes are well written and easy to follow.

Wide ranging and interesting
I love the fact that Pascal will give anything a try, the photos are superb, the writing is easy and enthusiastic, he obviously has a real passion. I have so far tried 12 recipes, all fantastic and I am looking forward to experimenting much more.

Joyful and Free-Spirited Reading for Wildcrafting Brewers
This book is a treasure trove of fun ideas on how to explore fermentation, and all the brews that folks have been making for millennia - the author makes no pretense about the fact that his "recipes" are simple, archaic and completely open to interpretation by the reader. These recipes lie somewhere on the continuum of soda, wine, beer, mead, and everything in between. The emphasis on finding inspiration in local "terroir" is paramount, and makes for joyful reading. I feel so lucky to own this book! I can't wait to start experimenting and having fun. I can only hope some of my creations turn out as colourful and and unique as Pascal's did. Off to find out. :)

The second book in the Wildcrafting series continues to delight and amaze!
This is a beautifully designed book, but that's just on the surface. Going deeper, there are tons of wonderful photographs and more importantly, great recipes. But it's not just the recipes, it is the information presented in a clear and concise format with many little funny jokes and other anecdotes that really make it a pleasure to read.Also, it sparks a curiosity in you and encourages you to not only run the recipes but to also go wild and create your own using the info as a basis upon which to build your own knowledge. I love that Pascal gives the Latin binomials when introducing a new plant as common names can be mistaken based upon different popular names used in different parts of the world and the country.He has even made sure to put a caution in for pregnant women, attesting to the thoroughness of his approach. I'm only about 1/3 of the way through and my mind is already exploding with ideas. The only problem now is picking one to start with as there are so many interesting choices available.If you haven't already gotten it, you be be well served to go ahead and get his first book (also on Amazon), because it is every bit as good as this one is and also as comprehensive as possible for a single volume.Pascal is a well-known forager in the Los Angeles area and provides for many elite and exotic chefs who want to work with ingredients that are not usually available to the general restaurant suppliers. They really push the envelope of modern cuisine with his help.I can only give this book 5 stars, but it deserves at least 10, maybe even 15.

Stupendo!
Un libro stupendo che apre tantissimi nuovi orizzonti a chi è appassionato di bevande fermentate. Il libro è estremamente approfondito mantenendo tuttavia una grande leggibilità. Il linguaggio è semplice e scorrevole. Le foto sono belle ma anche significative. Uno dei migliori acquisti sul tema.
