My husband recently converted to vegetarianism and I have not eaten meat on-and-off for the past 27 years. He has been diligently researching new and creative ways to incorporate protein into our diets. I told him that when I was a kid, my mom (an immigrant from Taiwan) would sometimes buy these lumpy, squishy things made of wheat gluten. He was stunned, given all the anti-gluten hype lately. It is a common meat substitute in Chinese cooking where many people adhere to a vegetarian diet as practicing Buddhists. Even though my mother did not subscribe to that philosophical belief, it is so ingrained in the culture that even non-vegeterians still eat this stuff commonly where she's from. That's why the fear of gluten in this country is bewildering to me.Hubby was intrigued and we purchased this bag of vital wheat gluten after he found several recipes for how to use it to make seitan (e.g. the lumpy, squishy stuff from my youth). This bag was an excellent price for its size and the value was unbeatable.The first batches we made were just boiled. It requires you first make a dough out of vital wheat gluten, nutritional yeast, and spices and flavorings. That went well and he enjoyed the texture. He bakes his own bread so is used to the stringy, elastic texture of working with gluten strands. He liked the tactile sensation of the seitan dough and thought it was a fun procedure.From there, we've branched out and tried baking the setain and even using it to make vegan ribs! It was amazingly yummy! We incorporated shredded artichoke hearts in the dough to simulate the pull-apart texture of meat and it was almost frighteningly realistic. It's been a while now since I've eaten meat and the seitan 'ribs' were so realistic, my stomach started turning because my mouth really thought it was chewing on meat. Funnily, that I had that gut reaction is a huge compliment!So to all you vegetarians, vegans, and meatless allies out there or if you're simply an adventurous eater who wants to throw caution to the wind and backlash against the anti-gluten movement, definitely give this ingredient a try!!!

Bread comes out well. It's a bit on the dry side...
This was my first purchase of this product. I used it with the costco provided all purpose flour and it works well.One thing I noticed is that I need to use ~ 10% of it in weight compared to Bob's Red Mill where I used a bit less. I also notice having to add a bit more water to get the bread to come out well.One thing I would request the manufacturer of this is that I would make it a bit easier to use once it is closed once some flour is taken out.Please think about a different kind of ziplock mechanism or something to make it easier to store. I had to put the bag provided into a 1 gallon ziplock bag to store as it was harder to close it and get a good seal without leaks.Since I see this throughout the industry, I didn't knock off any stars.

Best Vital Wheat Gluten Ever!
I bake bread in the bread machine several times a week and use vital wheat gluten in nearly every batch. Decided to search for a cheaper alternative to the two commonly available brands sold in grocery stores, especially since the last bag of one of those seemed to give my breads a slightly off smell and taste. Very glad I tried this Hoosier Hill Farm VWG because now I'm hooked and will never go back! It provides at least TWICE the elasticity and boost of other VWGs. In fact, the first loaf I baked with Hoosier Hill Farm almost exploded out of my bread machine, it rose so high. I cut back by about half, and that seems about right for my tried and tested recipes. Even my family and friends noticed the difference and commented on the amazing texture. Highly recommended (just be sure to ease off on the quantity or size of your loaf to account for more lift).

GREAT FOR KETO BREAD BAKING
This Vital Wheat Gluten is great for making keto bread with the YouTube recipe ONLINE. For the recipe, Google "keto king bread" - best keto bread recipe in bread machine! Been on keto and intermittent fasting for 3 yrs. now. Don't know what I'd do without this bread recipe and Butter Bob Brigg's super easy mayonnaise recipe. Both are wonderful and make this lifestyle doable. Huge health improvements, not just the weight loss! I love this stuff! Makes living this excellent lifestyle very easy.

Bag Had a Hole in it.
I have ordered 2 four pound bags of this product before. But I was disappointed this time because one of the bags had a hole in it. Very Happy amazon is replacing at no charge and I do not have to return the bag with the hole.

AWESOME! - GREAT FOR BREAD + SEITAN
This vital wheat gluten is wonderful. I use it in homemade bread. It helps improve the texture and also helps the bread rise even further. I've also use the vital wheat gluten to make seitan. It creates really good seitan meats and packs lots of protein - about 24g per 1/4 cup (which makes about 1 sausage-size amount).This 4-pound size sturdy bag stores the wheat gluten well with a tight zip-lock enclosure. I live in Florida where it's pretty humid and it stores well.Overall, this is a great product, best price, and I also appreciate the non-GMO label. I will definitely continue to buy this and I highly recommend it.

Works Great for Our Seitan Recipe
Vital wheat gluten is vital for our Seitan recipes - and Hoosier Hill Farm Vital Wheat Gluten does the job well. We make the "Saved by Seitan" recipe from Lauren Toyota's "Hot for Food Vegan Comfort Classics" cookbook and then use it for Philly Cheese Steaks and Gyro Wraps. Awesome. One minor quibble - the plastic bag that the gluten is packed in was damaged in shipment and when we opened the box we had gluten all over the place. But that's a packaging/shipping complaint, not a product complaint. Maybe Hoosier Hill Farms should consider a sturdier bag or bag inside a box....

High Quality Vital Wheat Gluten
I like that this Hoosier Hill Farm Vital Wheat Gluten is higher in protein content because I am vegan and need all the protein I can get from non-animal sources! So far I have made a baked stuffed-Thanksgiving-seitan roll and steamed seitan sausages from this vital wheat gluten. Both recipes turned out terrific. This is high quality vital wheat gluten and it shows when you use it to make seitan. I highly recommend it. I plan on purchasing it again after I use up the bag I purchased.

Gluten-tag!
If you're looking to buy this product because you're a vegan and wanna make seitan, look no further my friend. Congrats on making a sensible decision. Babe the Pig salutes you, as do I. Gluten-tag. Sure, there are a few 1-star ratings, but pay them no mind. Unless, of course, you'd feel completely slighted and/or disrespected if there were,,,gasp!,,, holes in the bag. Like, O!--M!--G!. Yeah, that wouldn't be fun, but that's life. Luckily, Amazon does a pretty good job accepting returns and doling out replacements or refunds. If you're gonna give it one star for a shipping issue, please stop telling people that you're a vegan, you're making the rest of us look bad. Sure, some of us may think we're slightly better than everyone else for being vegan, but we need to keep that to ourselves!

An ingredient almost everyone should have in their pantry
I feel like having a bumper sticker saying " I love gluten ". I've seen a few of those stickers around and I know a baker who does have one on their back car window, as well as a two bakeries that sell them to customers. To me bread and gluten always are supposed to go together, that is my opinion however there are other opinions so that is perfectly fine as well.I needed a new bag so I thought to try this brand off Amazon, Hoosier Hill Farm. I opened it up, the scent was pleasing and not stale or that old off smell so I knew it was a fresh batch, good so far. Took a pinch and felt the their grind and it was quite nice actually, uniform and soft, good again. We grabbed a family recipe and made a loaf, it turned out fantastic. Baking any sort of bread ( with this item or not ) always seems to make any house into a home with that fresh bread aroma. Did the first cut and was very impressed the results. Threw on some whipped butter and within an hour the family polished off that loaf.I'd recommend Hoosier Hill Farm Vital wheat gluten to anyoneπππ I hope you found this review helpful, I try hard to make reviews as such with facts. Perfect product
I bought bread machine for years, but never made perfect bread with regular all purpose flour. And I don't want to buy those expensive bread flour. Until one day I heard that vital wheat gluten mixed with all purpose flour could make bread flour. I tried this product. It works perfectly! I would highly recommend this to someone who want to make bread and don't want to buy bread flour (same as me). ^-^

Best Flour for Keto bread
I make Keto bread with this. Used another brand when this was not available and the bread was a disaster tried several times and almost bought a new breadmaker as was blaming it. Then I got this brand again and bread back to normal. P,ease keep it on stock. Currently not and am not able to make bread.

Weigh your measurements in gm's!
Keto Bread made with Hoosier Vital Wheat Gluten, not recommended for people who are allergic to gluten. I get 1-16 slices from my glass pans. With only 2-5 net carbs. My bread has turned out absolutely awesome. I would recommend all of their products!
