From the label: E450Diphosphates, E500 sodium carbonate; maize starch

Q: is this single acting baking powder?

Not really, but it depends what you're comparing it to. It contains E450 diphosphates and E500 sodium carbonate. The diphosphates contribute acid that reacts with the sodium carbonate. SInce this reaction happens when the powder hits water, this technically makes it double acting. From what I can tell though, this is a "milder" reaction than you get from the envelope version of Dr Oetkers baking powder, (a "true" double acting powder that uses sodium bicarbonate). Hope this helps more than it confuses! I use it mostly because other powders (esp 2x acting powders that contain sodium bicarbonate) produce a slight bitterness, or off flavor (to me anyway)
