Why would the information paper that was with it say "not intended for stove top use" ?

The baking pans are cast a little thinner than the pots which makes them lighter. Warping may occur with quick changes in temp from either cold to hot or hot to cold. They make a double burner pan but it’s $100 from their website. It is confusing because they say it won’t warp, but I think it’s with the intention that it will be used in an oven. I’m going to try it on my stove and be careful with the heat because I can’t afford the $100 and I need something lighter weight, with a higher side, but don’t want nonstick.

What happens if this used stovetop?

Stove top on an induction is the only way I have used it. works great, I love my CI.

Can it be used for making tortillas?

Yes. Definitely. Please watch the temperature, it gets hot on the low setting. I make pancakes and French toast on “2”. The temperature control is numbered 0 through 5. Love this product.
