Not made for butchers (so I thought)
Handle is far too slick and the blade is rather flimsy.. good for home use only. This was my first impression after receiving a knife with a slight bend and a not so sharp blade.. but then Dalstrong stepped in and made it right! Let me start by saying that I am somewhat picky and very detail oriented.. After sharing my concerns with the customer service team, they were very prompt in making sure I was happy. Thy sent me another knife (no charge) to make up for it. The knife I received arrived in perfect condition and razor sharp. The handle took me a minute to get used to after using a different brand of knives for so long. However, if ya keep your cutting hand clean there shouldn't be any issues. The craftsmanship is extremely good and the packaging the knives come in immediately shows how much they care about what they're doing. Dalstrong customer service is the best I've ever experienced. They go above and beyond to assist and assure that the customer is satisfied. Even after they sent me a replacement knife, they still reached out to me again a couple weeks later to make sure i was happy with the product. I highly recommend Dalstrong knives.. I've only used the gladiator series, but if this is any indication of what to expect from the other offerings they have, I'm sure I'd be very pleased with any product coming from them. And knowing how strong the customer service department is and their concern for the customers satisfaction.. just makes it a no-brainerHighly recommended

I recommend this knife 100% to anybody who loves to cut meat
This knife is amazing if you love to cut meat like I do this is nice for you! If dal strong could ever sponsor me, I would definitely buy any knife or take any knife that they would give me I love their knives. They’re the best I do me cutting every day and the knife. I have right here is the best knife around if I could have some more butcher knives from Dal Strong I would!

Quite the knife
This knife is a lightweight beast. Razor sharp, holds its edge reasonably well but is easily brought back, it's seeing daily use in our meat shop. Breaking beef, filleting fish, cleaning up cuts, it does it all. I like it a lot more than our shops Victorinox blades, and my gods the handle feels so much better. The handle can feel a bit slippery though, an option for some grooves might be nice.The plastic case is nice, but split when someone knocked it on the floor. Not a huge loss as the knife goes in a bigger case with the others, but disappointing to lose a few days after getting it.I like it enough that I'll be ordering the Ravenger cleaver to play with, if the quality is just as nice it should be a great addition as well. Soon to be a repeat customer, looking forward to them coming out with a bull nose knife (hint hint! Make a bull nose!)

Sharp and Ergonomic........Did I say sharp????
Be careful.......Although I was a meat cutter in a former life...I don't recall ever using a sharper knife that was so well-crafted. Please keep it out of reach of children. It's awesome.......!!!!! Did I say SHARP.....?????

A sound investment for this hard working butcher
This blade is a butcher's best friend! Lightweight and easy to maintain... Just doesn't get much better than that. I use this style blade most out of any in my arsenal and this one is the best I've ever used (12+ years in the buisness). The photos don't let you know just how light this blade is, and the balance is amazing. When you are standing over a cutting table for 10 hours a day that makes all the difference right there. I would go into everything I've used this blade on, but that would take way too long. This is my workhorse and let me tell you it performs amazingly well and holds a crazy edge. Haven't had to sharpen it yet but I'm sure that it will be a breeze too. Thanks folks at Dalstrong for another beautifully crafted tool for this hard working butcher!

Great knives, handles need a little better design.
These are the first knives I've used other than the standard Victorinox knives for cutting meat for the last 15 years. I ordered the 6" Gladiator boning knife, as well as the 8" and 10" breaking knives. I've used them for a couple of weeks now, and there are many things that I'm really liking about these knives. They are a very well balanced set. The edges are holding up very well with daily use. One of my favorite things about the 6", is that the blade is wider than a traditional boning knife, and this is a great design so that knuckles don't drag on the cutting board when cutting with the whole edge. This allows the use of the whole blade length, not just the tip when cutting stew meat. If there is anything that I'm not 100% happy with these knives, is the handle design. First, the handles are super smooth. And secondly, there is no palm swell to help keep the handle centered in the hand. In fact, the handle has a wider butt, and gets narrower towards the blade. This means that when you have slick gloves from cutting product, the knife slips back in the hand, pushing fingers toward the blade while pushing the knives through large pieces of meat, and back when drawing it on the cut. The handles just gets so slick in the hand! I'll be looking at a way to add some type of texture that will be easy to keep clean, and will be safe for food handling. That being said, I really do like these knives. I'm looking forward to using them for many years, after I find a way to make the handles a little less slippery.

I Love The Gladiator Series Knives!
I'm not a professional chef, but you really don't need to be one to recognize quality cutlery and, if you cook regularly, it's worth having a good set of knives. I first started with the Dalstrong Gladiator series several years ago when I upgraded from one of those $99 department store sets to one of the Dalstrong Gladiator 8-piece block sets. I was incredibly impressed with the quality and ergonomics and have since added two of the four piece knife sets, a fillet knife, a boning knife, and this breaking knife. I'm not sure I'll need any other knives in the future but, if I do, I'll be looking at another Dalstrong Gladiator!
