you can set the temperature you are wanting your food to be and an alarm sounds when the temp u set has been reached

Yes. The lowest time is one minute. No seconds.

How long is the cord?

We no longer have this thermometer ....we actually went through 2 of them and then said no more and found another brand . To answer your question I would guesstimate about 18 " long ...I cant measure as it has been thrown in the garbage .

If I want to cool an item, does it alarm when the temp is falling to the set temp?

I imagine it would if you took the probe out and let it cool for a min then re-insert setting it to the temp you are wanting to achieve .
